Our Favorite Summer Recipes

 

As the weather gets warmer and the days get longer, we start craving our tried and true summer meals. What better way to kick off the season then to share a collection of our favorite recipes?

Breakfast – Luke Humphries – Perfect Paleo Egg in an Avocado Nest – As a personal trainer with a packed schedule, Luke needs a go-to breakfast that involves little to no prep time. Luke also finds that he and many of his clients feel more energized and satisfied by a breakfast that does not include carbohydrates. This foolproof dish is a great solution!

Snack – Alex Franyo – Crispy Roasted Sugar Snap Peas – Something to note about Alex, he has a hard time getting enough vegetables in his diet. One of his very favorites to munch on is summer sugar snap peas. This quick and easy recipe elevates his favorite snack to a delicious treat that feels more indulgent than it is. The best part: you can season the peas with absolutely anything to change up the flavor!

Lunch – Lisa Epstein – Teriyaki Chicken Lettuce Cups – These fresh and healthy lettuce cups are the perfect light lunch to keep you moving through that mid-day slump. If you pack lunch for work, like Lisa does, she recommends packing the crushed rice cakes and the lettuce separately to keep them from getting soggy. The teriyaki chicken mixture will store well for a few days in the fridge, so make this recipe on a Sunday and portion it out for lunches for the week.

Appetizer – Nicole Trice – Bold Yet Basic Bruschetta – AAC trainer Nicole Trice likes to keep her recipes classic with a twist, like this fresh and flavorful bruschetta. Nicole favors this Caprese rendition, because the diced mozzarella cheese rounds out the flavors of a traditional bruschetta recipe.

Soup – Meredith Luecker – Gochujang Gazpacho – Soup may not be the first thing that comes to mind when you think of summer recipes, but give this cold, slightly spicy recipe a try. Loaded with seasonal flavor, this refreshing Korean spin on traditional gazpacho just might land among your favorites.

Entree – Debra Nathan – Pounded Parmesan Chicken – Debra is the queen of entertaining, and she knows that nothing pleases a crowd like this Parmesan Chicken over a fresh summer salad. Healthy, simple, and delicious!

From the Grill – Nicole Meidinger – Spicy Cilantro Lime Shrimp – Is there anything better than grilling out in the summer? No way! Nicole shared her favorite satisfying summer protein: spicy shrimp dipped in a creamy avocado cilantro yogurt sauce. This zesty low-carb offering is easily pulled together in about 20 minutes.

Dessert – Anna Tapani – Avocado Strawberry Ice Cream – Anyone that knows personal trainer Anna Tapani knows that she can’t get enough of combining avocados and strawberries in the summer time (BONUS RECIPE: Anna’s favorite Avocado Strawberry Toast). This no-churn ice cream recipe is her dream come true, especially because it is dairy-free and has very little added sugar. Anna likes to follow the recipe, but also keep some quartered strawberries aside to scatter between the layers.

Cocktail – Olivia Nathan – Watermelon Rosé Margaritas – A fantastic combination of summer’s best: watermelon and margaritas! If you’re a little lazy in the kitchen (like Olivia!), skip the watermelon rosé simple syrup. If your watermelon is ripe, the drink will be sweet enough!
